are there any PS1 games that solely used vertex coloring to texture their environments? interested in what it would look like from capable artists
or it could just be enemies like in FF7

Spyro famously does it with the skyboxes, but the environment still uses textures in conjunction with the vertex shading

for anyone unfamiliar with vertex coloring, this is how it works. the colors are dependent upon the faces of the mesh itself; more faces, more places to put color

Crash Bandicoot used a whole lot of vertex/giroud shading instead of textures which allowed it to be one of the best looking/ least texture warping games on PS1. They did texture things though it wasn't entirely shaded but the Crash model itself is so are many scenery elements and most enemies.

no idea, that pic isn't mine. I managed to open them in 4.0, downloaded the models from here
tried opening them with blender as an fbx and obj but it wasn't working so I opened them using noesis and it worked in there. in noesis you can export to fbx and it works perfectly in blender after that

They did such a fantastic job vertex painting the enemies and world and chibis. I'm more interested in getting them back into a format readable by ff7, I know there are a few models viewers for psx but I don't think anybody ever made any import/export plugin for blender.

I feel like there's so much room for applying this technique to modern games. It'd be a great way for a game to imitate the spirit of the PS1 without being limited to PS1 technology. So you could still have a lot more polygons but no textures whatsoever.

A major issue with using vertex colors is that on most game engines they're not supported by default. Devs are lazy and writing shaders is usually reserved for the smarter devs which may not be available.
