For GBC, there's also the JP-only Kakurenbo Battle: Monster Tactics. If it weren't for that Star Ocean game, I would consider it to have the best visuals on the system.

A lot of the card artwork in Pokémon TCG (GBC), Pokémon TCG 2 (GBC), Yu-Gi-Oh! Duel Monsters (GB) and Yu-Gi-Oh! Dark Duel Stories (GBC) looks superb even today, especially with those smaller resolutions they had to work with due to it being on handhelds, I love the way these look so much.

I genuinely dislike the trend towards big cartoony cutout graphics that break the boundaries of typical power-of-2 tile/sprite sizes in the latter days of the 16-bit era.
Not even autistic, it's just visually satisfying when everything is in its place. In my mind great "pixel" art is using those pixels within organized constraints, not trying to asymptotically approach freeform illustrations.

How do you think those games were made?

This is the problem with modern "pixel artists". They draw the art directly in pixel form. You're supposed to be a good artist first, draw concept art, then draw your art on grid paper, then do your best at importing that into the computer. Scanning was a possibility.

Castle of Illusion has some of the most sublime graphics you'll ever see in a video game... it just captured the essence of Disney perfectly, it's so good you can tell the developers truly cared for this IP and wanted to do it justice, and they did.

I definitely recommend everyone play this, as it not only has good aesthetics, but also play really well, with tight level design and control. I love it.
