I think fighting games on the Neo Geo, not only SNK's, have more finesse, both on graphic style and gameplay, compared to Capcom.
I vividly remember the impression KoF 98 left on me the first time I saw it. Compared to MvC, which was what I was playing, it looked much more mature. I still think it does, comparing it even to SF3 and SFA3.
I was instantly hooked on it and I still keep that opinion.

Thinking about it now, I realize that I really like of 4 Capcom fightans - Street Fighter 2:TNC, SFAlpha 2, Rival Schools and non retro Street Fighter IV - and King of Fighters 94,95,96,97,98,2002, Samurai Spirits 1, 2, 3, Fatal Fury 1, 2, 3, RBS, MW and AoF 1 and 2. Yeah, a lot more on SNK side, but in top of all that I prefer SF2 for no reason.

I think I played every one of the games on SNK's franchises, but c'mon, some of them are clearly better and make the others redundant and obsolete.

For instance: KoF 96 does everything better than 94 and 96.
KoF 98 does everything better than 97 (and probably all the others too). Only thing 96 has to avoid its obsolescence is the setting and music.
Real Bout Fatal Fury Special and RB2 simply DESTROY 1, 2 and 3. Garou MotW doesn't overshadow those games, though.
Samurai Spirits... well, it's more a question of preference. I think the first one is redundant. The graphics got much better in 3 and specially 4.
Art of Fighting... as much I loved the first one, it's a series that got too much better competition to keep me going back to it. I think this one is mostly for fans.
You forgot The Last Blade. Man, probably the prettiest gem in the bunch in terms of graphics, setting and character designs, even if not the most engaging gameplay-wise (still good, just not as fun, I think).

Also, what's the deal with 6-button gameplay?
I feel like Capcom started it on SF2 and just keeps it for tradition. Gameplay-wise, you don't need it.
I submit that you only need 3 buttons to make a fighting game play.
4 looks logical (weak and strong versions of punch and kick or left and right limbs), but you end up with useless/unoptimal attacks. I think you need to separate buttons by utility: jab, overhead, low, strong (high priority, low recover), etc.

Anyone still think 6 buttons isn't overkill?

After giving our Mega Drive to our cousins, my family was PC only so I never ended up playing Street Fighter, Tekken or other popular fighters. However, at one point my big brother got a 2-in1 package that Samurai Spirits 2 and we both played the shit out of it.

The only series that I REALLY like in SNK was samsho. Probably only samsho 5 special edition because it's actually balanced and fight like a sword fighting game, but I'm not too hot into other series.

I do appreciate that they stick to the "strict input" tradition in Kof13 though, instead of going full casual mode.

I'm mexican and I got into SNK when I had a gametap account, first KOF game I played was '98. It was really cool but i've been more a street fighter guy. When I found out they made a crossover series, I just exploded with happiness because Ryu vs Terry was like the coolest thing ever. Still to this day, (I know not "retro") but Capcom vs SNK 2 is one of my top favorite games because it brought more SNK fighters like Rock Howard and Joe into the game which was so awesome. SNK's game are great! 2D 3v3 fighter games with fast pace moves and unique teams. All about that All-Star team though Terry, Ryo and Kyo.

6 button control is best control. Love SNK but prefer the playstyle of capcom better. MVC1 is the best in terms of control & fluidity of all 2D fighters. MVC3 sucks dicks. King is best SNK fighter.
