The scanlines are independent of the grille or mask. Those separate the colors so you get a full color image but the underlying tech, the scanlines, are the same as in black and white TVs.

Arcade monitors were almost universally curved slot masks so that could be relevant. Plus it's hard to find curved Aperture grille sets that have component inputs. Sony went all in on the flat glass trend which is fine for normal TV but isn't great for retro gaming.

Apple-branded external Mac color monitors were usually Trinitrons (Aperture grille). The large ones even had the dual wires securing the grille.
13-inch versions were single wire.

Not every monitor from Apple was trinitron, but many were.

One thing about Trinitrons is that their claim to fame came before slot masks were a thing. When up against old dot trio shadowmasks from the 1970s it was like night and day because of how much brighter the screen was. As the decades moved on, and especially once you get to the 90s, consumer TVs using slot masks had perfectly good brightness. What I notice, and this is obviously a calibration thing but it's a consistent enough problem that it's clearly relevant, is that later model Trinitrons tend to have an aggressive red push. I don't know if that's because Sony really wanted to push the brightness to the max or just because they liked rolling them out of the factory that way for the showrooms, but it's hard to not see once you notice.

Top is slot mask, bottom is aperture grille. It does come down to taste. I personally prefer the more woven look of a slot mask rather than the solid phosphor lines. At a normal distance you're not going to notice the specific mask type but in terms of how the overall picture looks I feel like aperture grilles look more aggressively saturated.

The nice thing about Sony TVs is that they're pretty much all the same. Other manufacturers often sourced tubes from a lot of different companies so you might get less consistency. JVC's D-Series has an excellent reputation but JVC didn't make tubes in-house so you can get one of a good half dozen or so variants. Toshiba was better with this. You'll either get a Toshiba tube or, on the smaller sets, Orion.

For the record my unidentifiable Best Buy flatscreen has more pronounced scanlines than I like even on PS1 composite, albeit only very slightly. You can barely see any separation on a 13" hand me down TV from the 80s. That's probably one reason 240p was used in the first place. At the time it was a way to get jitter free 60fps with no visible downsides since most people were playing on TVs that were small enough where halving the resolution wasn't going to be noticeable. If you look at the back of old game boxes the screenshots show no visible scanline effect. If typical consumer TVs showed the dramatic effect of a PVM chances are they wouldn't have done it and instead stuck to 480i. Obviously larger and better TVs would increase the visibility but, again, it wasn't that common for people to be rocking TVs of that size back then unless they were using a rear projection which were so dim and blurry it wasn't going to matter.

I don't know where you get the idea that TVs were all tiny in the 80s. 19" and 21" were the most common by far but you could easily get 25" and 27" TVs in the mid-80s. The LCD grid on a GBA is pretty obvious but it didn't stop them from using that either.

Even at 20" you have pretty tight scanline spacing. Not unnoticeable but blooming is a hell of a thing. And of course large CRTs were a thing. But they were also very expensive. And 80s America wasn't exactly an economic utopia. Sure, rich yuppies were building entertainment centers with their Hi-Fi and Laserdisc player but most people's living room TV set was, as you said, 19-21".
