Darkstalkers was Capcom's very next fighting game after all the SF2 updates. It predates pretty much all the anime games you're thinking of. It was the first series to have mechanics that became staples of the genre like chain combos, guard cancels, air dashes, and EX specials. And at a time when most fighting games were still full of the same martial artist archetypes doing fancy punches and kicks and throwing fireballs, Darkstalkers had mummies putting curses on you, zombies sprouting chainsaws from their legs, mermen summoning geysers, yetis spitting snowmen, robots with more gadgets than a Transformer, succubi with jet packs and drills, and so on.
