Mednafen/Beetle Saturn is the first really decent Saturn emulator, and it's the go-to choice in most cases and Yabause actually has some semi-decent forks now.

FM Towns you can emulate on PC using Tsugaru or something similar. I've emulated Amiga before myself (specifically CD32) on Android but I wasn't very impressed with the game selection on it

In theory, yeah. But the emulators are coded like shit and need a modern botnet computer with OpenGL these days.
Personally I don't bother and emulate Atari 800, Amstrad, and Speccy instead.

Those are fine. FM-7 is like any other early home PC (but Japan :O) where the worst issues you might run into are related to you not having the manual/case and thus not knowing how to load your game, at least in my experience. I do find Towns and Amiga have some similarities in set-up woes but you just need to hunker down and get how those systems work for a bit. Of course that's a bit easier for Amiga as that has a larger amount of English resources, but if you are looking into FM Towns, you probably have loads of free time.
