You don't really have any fun with new games or new old games. You can only ever really play the same games that You played as a kid. Everytime You try to play a game You guys talk about You usually start getting bored. It just feels like a worse version of something You've already played and would rather replay. And You don't really enjoy anything released past 2010 because a lot of modern games are just really chatty and embarrassing to play, while indie revival games are just shitty versions of games You've already played or they remind You too much of mobile games. Its not really nostalgia because You're not really reminded of childhood or anything like that. You just like the games You've already played more.

Yes I often play games I know just because I know what I am getting into, its surprisingly difficult to find a game like mario but is not mario, you would think there would be hundreds of clones but no lets spend our time porting computer war simulators and board games to the nes.

Most people can only consume so much media before the impression it leaves is dull and muted. Discovering and playing new (to you) forms of media grows to be a chore. Even when you enjoy it in the moment, you barely remember what you consumed by the time its done. Onto the next one. Hooray.
Replaying, relistening, etc. to old media is regrettably more appealing as it is a known quantity. Even if your glasses are rose-tinted, the reality at least still bears some resemblance to the fantasy.

Right now, I still play some different games but I rarely touch new games from certain genres because I already know that I'll just want to go back to what I enjoyed more
At some point, I won't touch even a single new game because they won't just give me the same impression, I'll consider them worse and simply ignore them

It's whatever I have access to and whatever I'm in the mood for. I have close to a dozen different handhelds, some of them are Famiclones, some can play PS1 games, I have full rom sets for most cartridge consoles including SEGA CD and 32X as well as smaller sets of other CD consoles.

You're mostly right about modern gaming, a lot of it either just doesn't interest me or ends up being a pale imitation of the games I actually grew up with. Right now I don't have the time to devote to any big games so I've been sticking with mostly just cheap Famiclones I've been buying just for fun. When I have more time, maybe I'll go back to playing bigger games again, but right now just sticking with mostly simple 8-bit games like Tetris and Mario.
