190 pokemon were designed for gen 1, we know of all the 39 pokemon that were cut, none made it to the final version of gen 2. Moreover we have access to several beta versions of gold and silver that show how they were actively heavily redesigning pokemon all the way through development. Now add to this Sugimori interviews which are the cherry on top.

There was a thread about this the other day, but the Pokemon Blue Sugimori art (aka the ones that appeared in most English players guides) turned out to be the wrong colors. Looking through Japanese promotional materials, there's a LOT of minor color variations of this art.

What probably happened was Gamefreak faxing the physical art to different magazines, who then had to make their own scans (instead of doing a master scan and e-mailing it out, like you would today). So color information was lost to varying degrees based on how good the fax machines and scanning equipment was. Whoever put together the image set for Western use was working with particularly awful scans, so those are the ones we got.

The opposite. Basically, a Pokemon have a flight or fight response when they're in injured, except their "flight" is shrinking and hiding somewhere safe while they recover. Pokeballs take advantage of this instinct by providing them a "safe" place to shrink into. Although they seemingly understand that they're being trapped and will try to break out. You have to weaken them to both trigger their instincts to shrink and to make sure they don't have the energy to escape. (although how capturing Pokemon at full HP works is anyone's guess)

The reason you can't capture a fainted Pokemon is because you weakened it to the point where it shrunk to escape. If you look carefully in the more recent games, you can see them doing it (only wild Pokemon do it).

Of course, this is only game canon. The anime had a very different interpretation of how Pokemon work.
