I originally played FF1 on NES. Then I got the PS1 remake. It's okay. I dunno. Nothing is bad about it and they made a lot of fixes and improvements. But I'd still rather play the orginal. I think the simplicity of it makes it more charming and fun.

In my opinion:
FF1: NES, WonderSwan and PS1
FF2: NES, WonderSwan and PS1
FF3: Famicom or Pixel Remaster
FF4, 5 and 6: SNES
FF7, 8 and 9: PS1
FFX: PS2
FFXI: never played it
FFXII: never played this one either

I like the GBA and PSP ports well enough, but I don't really think they're the best way to play these games. The ports of FF1 & 2 change the gameplay pretty substantially and not necessarily for the better.
The 3D remakes of 3 and 4 that were initially on the DS are interesting. I didn't really care for the remake of 3, but I actually like the remake of 4 quite a bit. I like it a lot more than the 2D remake that was on PSP. I don't think it's the version you should play first, but I think it's worth playing.
I'm not really as picky with 7, 8 and 9 since most of the changes made in later ports are purely cosmetic, but I prefer the look of the PS1 games. I prefer the PS2 version of X because I think the models look nicer than they do in the HD remaster, ironically, but if you play the game on PC you have the option to mod the old models back in.

Puritan option is either NES or PS1. The GBA and PSP make some questionable gameplay changes (FF1 uses MP and the increased EXP/Gil gains from PS1 easy mode, FF2 tweaks the leveling system). If you do go for those versions, try to go for the PSP ones (FF1 adds new music to the GBA content bosses, FF2's PSP content is kinda interesting, if repetitive if you take full advantage of it.
The Pixel Remaster has some mods on PC also, so it may be worth looking at what's available.

III's versions may well all count as different games.
tl;dr: All three versions are playable, but the pixel remaster is the most approachable while the remake is the least approachable as it's harder/grindier. Also somebody always posts a review of III DS that is accurate in some ways but arguable/bullshit in others.

Generally, there's nothing wrong with the OG. The GBA has some bonus content (of questionable quality) including the ability to readd your party members at the endgame. The PSP version adds nothing new, but is packaged with The After Years, which itself is contentious.
The 3D remake makes the game harder and expands on the story a bit. It also has a system for giving characters new/different skills. Some would argue that, like III, it's a different game.

I'm not sure if there's a particularly "better" version of V. From what I understand, the GBA content comes so late that it's not much of a factor.

Again, no particularly "better" version of VI. Some of the GBA's bonus content is rooted in unused content for the OG, so it may have a novelty factor there.

Not him, but FFIII got -shafted- for the longest time. It was going to get a definitive WonderSwan Color remake like the first two (which aren't bad ways to play them because NASIR's programming for the Famicom originals barely held itself together), but something happened and it got canceled and replaced with a cheap, dreadful port of FFIV that became the basis for the terrible GBA conversion. Rumors have it that Square lost the source code mid-development somehow, or they welched themselves out of the Bandai commitment and ran to Sony to discuss a 3D remake of III, which then resulted in them cryng home to Nintendo for it. That's why III didn't have a PS1 or GBA version - the creative talent was all in on the WonderSwan remakes and the PS1 and GBA versions of I & II were just the dollar-store port crew. So then III eventually gets a 3D remake for DS, and it's the worst thing to happen to it. The biggest issue is that the developers were inexperienced with the hardware and perceived limitations, so they shrunk the max number of monsters in encounters significantly (IV 3D wouldn't do this), and compensated by "rebalancing" the entire game by making battles harder than before including unfairly having revived party members targeted on the turn they revive and multiple attacks making Phoenix Downs nearly useless in boss battles. The result is a schizophrenic mess of a playthrough. Worse, Square Enix pretended it was the only version of III for a while, so when time came for PSP and PC rereleases, they never adjusted any of this even when the "limitations" were no longer true (if they even were). So if you're looking for a modernized III, general consensus is that it's the least awful pixel remaster, by sole virtue of having no other 2D remake to compare it to. Even then, it goes a little in the -other- direction and makes the game -easier- but including a lot of the 3D remake changes under the hood and basically doing the equivalent of "no-lives" for an RPG.

Just play the original first and don't look up any guides. Yes, I'd argue it's definitely easier than what came before, but if you don't know how to exploit it, some parts might yet give you some trouble. If you jump straight into a harder mod, you'll have less of an appreciation for it, especially given they're usually made for veterans of the game and/or the series and will often subvert certain expectations because of that, all of which will be lost on you if you've not experienced the original.

Lots of good takes in this thread, but I want to say that the Pixel Remaster version of FF2 drastically improved my opinion of the game and left quite the impression on me. I think Nobuo Uematsu put the most work into the rearrangements of the music in that pixel remaster, and it's worth it for that alone. Final Fantasy 1 PR was also enjoyable but the NES version is quite good too.
If you've never played FF3 and you skip FF3 you're not missing anything.
The only way I would play FF4, FF6, FF7, or FF8 differently from their original is with a romhack for novelty after playing them so many time already. Although remastered FF8 is acceptable I guess, and Pixel Remaster FF4 is acceptable for accessibility because it's barely changed- the way the combat scripts work in that game basically prevents you from using the autobattle and the game is otherwise unchanged. I'm not a fan of the GBA versions at all- they're a downgrade in visual quality and do some unwanted gameplay/difficulty changes. In fact, even the Pixel Remaster feels like a downgrade in quality over the SNES FF6 graphically and artistically, even in the music area outside of Slam Shuffle or another track here or there. If you want the best FF6 you can get, go for the Brave New World romhack; honestly one of the most soul-fulfilling JRPG experiences of my life.

Most people like the ones they grew up with. That's why I like Final Fantasy IV and VI for SNES (and in my head still call them "2" and "3" sometimes). I never played the original for NES, but really enjoyed the Origins collection on PSX, so in my mind that's the best version of those games.

I think it's pretty universally accepted to avoid the weird mobile cashgrab versions of the classic FFs.

ff5: all versions are great, maybe less so the gba version as it adds unnecessary jobs and end game bosses, consider the pixel remaster it plays the exact same with some slightly flashier graphics also the sound is great
ff6: snes, avoid the psx release as it has load times

That's every version since WSC tho, hell there are patches for the NES version that fix many of those issues too.
