MGS is an audiovisual feat, but alot of it is just the creativity of the sound designers and the camera work from people with a vision.

Vagrant Story, yea, it's amazing. But maybe not across the whole game. I do remember large swaths of that game where you're underground in basic box rooms (with boxes, ironically)

Silent Hill contains a whole town, man. And it manages to be believable and creepy as hell.

I think the answer is likely Crash Team Racing or Spyro 3.

I know a lot of the answers here will be a JRPG, like Final Fantasy or Vagrant Story, but those games are very small environment with practically no real physics or AI and I cannot rationally say it's one of those.

Legend of the Dragoon really sticks out to me. It was a very hyped game and never really went anywhere. Always kind of stuck out to me though. The cut scenes were such an upgrade from the regular graphics it was kind of a treat especially between grinding levels in a place it seemed memorable. Modern games I've never really liked cut scenes, it's a button mashing event. Click X to skip the scene, oh wait you didn't do it enough re do this 20 minute cut scene you can't skip then click x a bunch of times. I can't believe people pre-order that kind of shit.

I was mostly an N64fag as a kid but my brother had a Playstation so I had access to both. That being said I was obviously biased towards the N64 but going back to the N64 on original hardware is pretty hard for me even being biased. With modern N64 emulation games typically run at the actual FPS cap instead of low-mid teens or even single digits in some cases. Unfortunately this has unintended side effects in some case. I've only seen this notable in DK64 where Rare designed aspects around the FPS drops (Kong's speed up at lower framerates to keep movement consistent) but a few mini-games are extremely difficult to complete. Most notable the 2nd Rabbit race and the lights out shooting game which is ridiculously hard to complete without pause buffering.

Games like Turok 2 in particular are outright unplayable to me on N64 with the terrible FOV and framerate. Thankfully the PC remaster exists in that case but half the difficulty in the N64 version is battling the dogshit framerate. The remaster only has a few very minor issues like the goofy portrait of Joshua but otherwise is the only way to play that game nowadays.

Main point though is going back to Playstation games in general they run much more smoothly, even games with a somewhat lower FPS cap they at least run consistently. Seems pretty common 20FPS cap games run at 20FPS most of the time.

PE2 does tons of great things, it pushes the concept of pre-rendered backgrounds to its maximum: it has scrolling, seemless transitions between FMV and backgrounds, mirror effects, and plenty more details to make the backgrounds come alive. Not even Onimusha does as much.

It's 320x240 cropped on the sides with a little more sky visible at the top of the screen. So the sprites are 1:1 pixel perfect but the view is a little bit zoomed in and the aspect ratio is slightly different.
But the characters and backgrounds don't lose any detail (other than the missing frames of animation).
