I mean, said fan hacks/remakes literally just took the classic games and polished them to a mirror shine while adding all sorts of different tweaks and options to make the definitive versions of themselves. 1 Forever, 2 Absolute, CD Restored, 3 Complete and 3 A.I.R. make the original roms obsolete.

Fan hacks are an extreme mixed bag. Some of them are great video games in their own right but others drag the bad aspects of modern games into the classics.
The real issue is that there's no way to tell whether a hack is good or bad without playing it yourself, sometimes extensively.
One of the nice things about playing old games is how easy it is to have a good experience. I don't like Final Fantasy 7 or Ocarina of Time very much but they're classics for a reason and 99% of people who play them will find something to love. Retro games are inherently less risky than modern games because you can always fall back on games that the general consensus considers to be good. With modern games people's standards have dropped so low that you can't trust any kind of consensus.
Hacks can disrupt that. It sounds nice to play a version of Fire Red with every Pokemon from the entire series obtainable, but most hacks that attempt that do so by shoving dozens of Pokemon in every route, which messes up the games' pacing in numerous ways.
Ultimately I find it easier to just play the original games regardless of what issues they may have rather than source and vet a hack that fixes the problems. If I do run into a bug that prevents me from completing the game I can get around it with cheat codes.

Because, very few of the 2D Sonic games were good? Sonic 2, 3&K, Advance are the least debatable ones. I love what they did with Triple Trouble, Advance 3, CD, and Pocket Adventure, but they're all not without their problems. Most of the other 2D Sonic games tend to have more bad ideas than good ones.

Because none of them are great? The only good thing in Adventure 1 is Sonic's campaign, and everything else is buggy and undercooked. Adventure 2 is fine but very basic compared to other 3D platforms from that era.
Everything else is either a runner akin to early mobile games, or a lesser (worse) clone of another popular game.
