Vagrant Story, Shadow Tower, Rage Racer and RRType 4 are my favorites. But there's a ton that look great. Remeber to not filter textures and not increase the resolution though. Blown up at modern resolutions destroys the art style of PSX games.

I would say Final Fantasy VII, Metal Gear Solid, and Silent Hill. Very atmospheric, gritty, good use of lighting, open environments, impressive cutscenes, character models, etc. FFVII specifically has impressive use of FMV and pre-rendered backgrounds. All three have very impressive camera work/scene composition as well.

Maybe I just got old but the PS1-3 all seemed so awesome and unique in so many ways. The MIPS processor in the PS1, the Emotion Engine in the PS2, and the Cell in the PS3 were all such cool under the hood specs. And the games were squeezing every ounce of life out of those damn things. Look at MGS4 on the PS3 and think about that shit being done on 256MB of RAM, or even Uncharted 2.

Jump to the PS4 and PS5 and there is nothing unique about those architechtures. They are all PCs in a box. All AMD APU setups special designed for their use case, but still an X86 box.

I started the original spyro for the first time, about 1 hour in and it is impressive what the psx is doing.

Oddworld has beautifully detailed backgrounds and wonderful atmosphere. Easily one of the prettiest games on the system. Great lighting, solid sprite work, and awesome art style. And even the music compliments the visuals very nicely, really sets the mood. One of my favorite games of all time.

There are some other downgrades, like lower resolution (512x480 arcade, 384x480 ps1), lower res special effects and removal of separately modelled fingers on characters (though these appear in Enbu intro, so the models are there, just not used during regular gameplay), but the port makes up for it with proper Anna Williams moveset and far superior soundtrack.
The most impressive thing about Tekken 3, and the thing that almost made the port impossible until Namco came up with a bespoke compression solution, is the amount of mocap animation. It was the thing that Tekken 3 had over Virtua Fighter 3 in arcades, despite being graphically and technically inferior. It's the same thing that made Tekken 3 superior on home consoles. Like look at static Dead or Alive or Kensei shots from the same period. Both have better resolution and smoother lighting than Tekken 3 but in motion they are not in the same league.

Well the N64 came out 2 years after the PS1 and obviously was designed with more RAM and CPU. Most people count the PS1/Saturn/N64 as the same generation for simplicity, but the N64 is technically several steps ahead for real-time 3D rendering. That being said, PS1 and Saturn having the advantages of CDs kinda evens it out a little.

The draw distance on the PSX was absolutely abysmal, especially in games that weren't very optimized for the system. Racing games suffered a lot because of this and sidestepped it by always having you race through constant turns.
