I mean, Ridge Racer 64 exists, despite numerous other arcade racing games on the console, while there is a distinct lack of Tekken or VF style game. Fighter's Destiny is close but lacks the fluidity and controls responsiveness.

I don't think going to a company that produces workstation hardware that takes hours to render an ultra high quality frame of animation was the best choice for game consoles which typically targeted 60 frames per second, or 30 frames per second in the early 3D era was the right move. On paper, N64 is capable of running 160,000 textured and shaded polygons per second. That's 2,666 polygons per frame for a 60fps game. With Tekken 2 characters being 800 polys each, this is more than enough to render the frame with two characters, a floor and a flat backdrop.
Now Tekken 3 characters are 1,500 polys each and they would have to be simplified to be squeezed into N64 specs.
In short, 60fps Tekken 2 port is definitely possible (with simplified textures because of cart size). Tekken 3 port is only possible with more significant downgrades.

Tekken 2 arcade version rom size is 194 mbit. Tekken 3 is 384 mbit. These are very stripped down with sampled midi music, just like N64 games, and only one several seconds long intro fmv each.
N64 games with enough rom size to fit Tekken 2 only appeared in late 1998. By that time Tekken 2 itself had became outdated.

The issue wasn't the polygons with the N64. It was the textures and storage. The N64 had to store lower quality textures because of limited storage space on the cartridges.
