Crash Team Racing for me. For a kart racer, it had a lot of depth with the drift mechanics & Boost Reserves. Time Trials were difficult, but fair; it forced you to get good. It blows Mario Kart, and Diddy Kong Racing out of the water.

I also played a lot of motor toon grand prix 2 as a kid even with friends playing each one a race track not being able to use the link cable our big dream was that it had the classic 2player by sharing the screen and even now I gladly replay it at least once a year.

I also bought all the various releases I just miss the (Ntsc / U) for now.

But not knowing Japanese I never understood why in the first Japanese edition it has 2 discs and what the 2 disc is for

I've been playing a ton of PS1 racers recently.
R4 - Always the king
GT - Really nostalgic going back to this. The licence tests are still a pain in the bellend
Porsche Challenge - Remember having a demo of this back in the day and was interested in giving it another sho. It holds up seriously well, excellent game.
Test Drive (series) - Completely ignored these when I was a kid but they're actually quite decent.
V Rally - Another nostalgic one, hard as balls
Colin McRae - Has some of the best handling of any racing game old or modern.

NFS Porsche Unleashed, given how different ps1 and pc versions are. It's pretty soul even if its mechanically just a re-skin of test drive. You buy cars and move from oldtimer era towards the modern era, there is also a driving school of sorts, plus cars take damage, and you have to repair them inbetween races. PS1 port is pretty underrated.

Sled Storm even though its not cars but snowmobiles. Excellent track design with plenty of shortcuts, you buy and upgrade your ride, there is also a trick system and all the numetal you could wish to match.

4x4 World Trophy - off road racing in jeeps with a good campaign mode, again you purchase vehicles and move up. I think there is a sequel on ps2 but can't vouch for quality.

Toca 1/2. 1 is more soulful, 2 has shitton of more content.

And in case you meant you only played the original CMR, then you absolutely must play CMR 2.0

Toca's a good shout, never played them as a kid but they were always hyped up.
I actually had Sled Storm, back then, completely forgot about it, brilliant game.
I'll give 4x4 a shot, love offroad racing in general.
Another one I forgot to mention was Rapid Racer, a speedboat racing game. I remember being amazed by it as a kid but it's one that hasn't really stood the test of time. Wave Race shits all over it.

When I got my PSone, for about a month the only two games I had were the original Gran Turismo and Toca 1. Gran Turismo obviously blew it out of the water but Toca's dynamic weather and so many more cars on screen at the same time blew my mind. Plus cockpit camera all with the functional wipers.
I also remember spending a lot of time with one of the F1 games but for the life of me I can't remember which one because they all look the same now looking back.

Regarding Gran Turismo, 1 is my favorite still but 2 got some mods/patches for the emulators. Fixed physics, restored content, true 60fps, true widescreen etc. Its phenomenal.

That's what I thought especially with the PAL version making some of the license tests even more unforgiving until I actually got all gold trophies about a month ago. Persistence is key. I felt that at some point there wasn't more skill to learn, I just had to try over and over until I got just the right timing and therefore just the right line in corners.

I did "cheat" in one test though. The rally license tests have such generous times that they don't really teach you anything about rallying and the rallying physics in GT2 are weird anyway, except that then the S license Tahiti Maze goes and ramps up the difficulty to impossible in the PAL version, and after trying it dozens of times and getting what would've been a gold time in either NTSC version on five occasions but still being seconds off the PAL gold time I simply reran it with the frozen timer cheat for a few seconds so I could finally get it over with. If I would've gotten gold five times over in the NTSC version I didn't see why I didn't deserve gold in the PAL version.

I got it when it came out and tried to play it again recently. Not as great the second time around when you notice the ice rink physics, samey progression, and the fact that some areas of the highway are easier to beat the ai in than others, leading to a lot of waiting for the stars to line up in the hard races.

Ya you can cheese the AI a bit in places, but the race mechanic is pretty unique and I love it. I havent played it in years but I had great times with it and with friends.

We would each claim a part of the highway and if something challenged us/ was challengeable on our strip, we got to do the race.

Grip cars just required you releasing the accelerator in order to turn. Only the DRT grip trials require proper braking.
Drift cars require you to tap the brake to initiate the drift. If you don't tap the brake, and try to just release the accelerator, the car is more likely to over rev and fishtail on exit.

close second is Tokyo Extreme Racer zero. me and my brothers favorite game of the 2000s highway japanese style racing perfection, huge roster of exclusive cars (even real ones from street racing scenes!), story was A+ for being a race game, music was awesome, and unlocking cars felt like a real accomplishment. for example when the game was released the 350Z wasnt even out yet and normies probably never even seen the car at all. but if you beat a rare spawned inependent racer who just so happens to be driving a test model you are able to obtain it yourself if you can beat him...

Need for speed Underground 2 was the last good racing game in my opinion.. Grid 1 + 2 were fun and ok but no where near the 500 -900 hour games like before. Racing games lost that edge/ fun that made them fun to play. Its all about " muh racing sims" but - psssst! guess what... even those games suck at capturing what real racing is like.. so maybe just maybe they should emulate the feeling racing gives rather than emulating true racing.

think about if Abzu was a " diving sim" it would be fucking lame as fuck

I can never decide if I like the OG release or no exit more. No exit has more vehicles, more tracks and in general looks better but it lacks the kart track, a couple songs from tommy tallarico (moving violation and meltdown) and loses some of the grimey, industrial styling.

The original looks industrial with muted colors and perfectly fitting metal + techno soundtrack. Engine fires and explosions look like they'll seep smoke through your speakers and clog your lungs. Meanwhile, No Exit looks like a bunch of shiny cars racing in colorful forests and dirt tracks like it's a friendly shitbox rally rather than a brutal demolition derby.
