Certain games make me wonder if they would look better through composite, because the way they use strong color contrasts in small areas make me wonder if they were trying to take advantage of bleed. They don’t look quite right with sharp pixels.

Just use S-Video, it's in the middle, besides they wouldn't create inputs if they weren't intended to be used lol.
The only cases I can think of where something like RGB or S-Video would ever be an issue is like very specific usage of dithering on old PS1 games
