When's the last time you used a flight stick? They make any game that supports them more fun, especially if they support the rudder twist functionality.

I used one for NES emu a while back (Microsoft sidewinder). It was kinda fun playing Gradius and Star Soldier with that setup, but a bit wonky. Maybe Atari would be fun with it? Had trouble with configuring so I had to use joy2key shite setup.

Removing an axis from pedals and putting it on a stick isn't adding another axis. It's just moving it. Moving it to a stupid location. A location so stupid in fact, that no actual airplane has ever used it for its rudder control. Admitting you use it for flight simulators loses you any credibility you might have had.

The pedals are a nice luxury, but it's still a nice feature that you don't have to use, and feels intuitive to me. I actually use to roll in Descent-type games. You can still use pedals in combination with joysticks with this feature.

I've got a version of this for dos and emulators. It has keyboard passthrough to do joystick -> keypress mapping.

Using kb+joysticks for FPS was extremely common before kb+mouse being the norm and it was basically how all the "pros" did it; except joystick was used for movement.

You know how in those old FPS you run faster by doing strafe+forward? I know for a fact that in DN3D you get that speed boost all the time using a joystick, which definitely gives you an advantage. Might be true in other games also, probably all Build games at least.
