It definitely still exists - there are plenty of new shmups and arcade inspired indie games coming out all the time made by the sorts of nerds who themselves love the best score attack games of the past. But I think as home gaming started getting more ubiquitous and technology started allowing for better graphics and sound and game design complexity, people just wanted bigger and more varied experiences. They valued games that told stories and had a sense of going on a journey like RPGs or action/adventure games, or simulated complex systems like strategy games, or just games that can last much longer than a session at an arcade cabinet and offer constant novelty as you make your way through it. In the face of something like Mega Man or SMB3 or Final Fantasy, a score attack game based around running the same stuff over and over to get good at it for its own sake just seems antiquated to a lot of people. Also, in the long period between the decline of the arcade and before online leaderboards, who are you going to be competing in NiGHTS against besides yourself?

Yeah, there's people that score it. People who are good at it chain enemies and bombs together and get 10,000 or more points from a single blast. There's a certain skill to it like all arcade score based games, and that's ultimately what the single player is for the 2D games. Also Saturn Bomberman has the master mode which is basically nothing but score attack, where the objective is to chain as many enemies together as possible to get the highest score.

Each microgame requires you to get a certain score to get crown/flower thing and unlock some extra stuff. Also there's a tower mode where you play endlessly until game over.

What makes score attack interesting to me is getting increasingly closer to perfection by learning levels in and out and figuring out how to squeeze every last drop, and a big part of what makes great arcade games is intelligent, well tuned level design. Having constantly changing levels that all feel the same because they're just the same room pieces locked together in different ways with a thoughtless dusting of enemies is so much less interesting to learn. It's even fucking worse when there's metaprogression, and so there's no way you can possibly be expected to win on your first few attempts because you need to unlock the upgrades to put you at an actually viable baseline.

Maybe it's not for you, but as a score attack game there aren't any obvious flaws. It's fast paced, involves flying and acrobatics, and has lots of techniques to increase your score, I don't see how that could fail to appeal to anybody.
