You can hold them down until the coils burn out, though that would take a while. A few newer games (e.g. Dialed In) have experimented with disabling the flippers but in general there is no limit. There is also usually no limit on how long a ball can sit in the shooter lane; games with autoplungers can have this as an option but it's set to off by default

Some tables have modes where you can't hold the flipper down.
Mandolorian and probably other future Sterns have a special Impossible Play difficulty where you can't hold down the flippers.
Wizard of Oz has a mode or a multiball where holding down the flippers makes the jackpot value go down.
While we're on the subject, there's modes like the soul gem battle in Avengers Infinity Quest where you have a limited number of flips to complete the mode.

A lot of pinball machines have wizard modes that are probably too tough for you to get to. Scared Stiff has a pretty reachable wizard mode, and a pretty enjoyable path to it.
TOTAN has a reachable and fun wizard mode. You have to plunge all the balls you get manually or else you'll fail the wizard mode quickly.
If you don't care about reaching the wizard mode, then almost all the games on the top 100 should be enjoyable to someone who doesn't care about score. Some of them you have to sort of know what you're doing a little bit to have fun.
