I've got an original Retrotink 2x and it just freaks the fuck out when I try to do that

Modern composite encoders look as good as RGB did 30 years ago and even too sharp for the composite dithering to work, yet alone S-Video.
You could swap new encoders into old consoles always, just order the encoder from China for pennies. Most encoders that output composite, output S-Video too, since it's the same signal, just separate.

I don't think you know the difference between digital and analog video.
