The Saturn version of Linda^3 is generally considered the best one
The PS1 version got Snoy'ed and had cruel/violent parts censored. The Saturn version came after and is basically just the PS1 version with the censored content restored and a couple of minor features added. So there's no reason to play the PS1 version at all.
The PC Engine version is still interesting for the original artwork, though, since it was changed a lot in the PS/SS version.

The third game in Falcom's Legend of Heroes series, which became the Trails series these days.
This game came out for multiple platforms, including in English for the PSP port ("Prophecy of the Moonlight Witch"), but the Saturn version has a unique look, with an isometric viewpoint, enhanced pixel/sprite animation, different character designs, and FMV animation.

Usually there are more than enough people willing to do the work of translating the script, but every game has unique problems when it comes to injecting the text. Sometimes JP-only versions of localized games are easier to figure out because people are already familiar with them

Grandia on Saturn is the original game and has, you know, graphics that aren't totally fucking borked compared to the PS1 version rearranging entire tilesets for no good reason, removing town shadows, some visual effects, you name it. And the translation for that is just someone importing the PS1 localization anyway.

Is there a way to play Panzer Dragoon Saga with Pseudosaturn? I keep reading mixed things. If anyone could explain it to a retard, such as myself, it would be greatly appreciated.
