i played the hell out of a game i got in a cereal box back in the day called skateboard park tycoon. it was pretty cool, since you could build your own park and then skate in it.

I don't have any recommendations sadly because Theme Park/Hospital are peak wacky simulator to me. Nothing else comes close in charm.

Fucking Pizza Tycoon
You'd think something as silly as that would be a easy kids game, but Pizza tycoon is legit one of the hardest "Tycoon" games I can think of. There is so fucking much to keep track of.
Its still neat and has a weird art style. Its well worth checking out.
