Mostly cheap chinese cables but sometimes I find decent old cables on fleamarkets like a 90's Hama cable for my PSX
For SCART to VGA adapters for scalers I cut an old VGA cable in half and solder a SCART ass to it

Packapunch. When I first got my Saturn I bought a cheap RGB cable from China, but it had problems where the image would get a purple tinge at times. Now all my consoles run through Packapunch cables, except the AV Famicom since it's composite only straight from the video chip for some reason.

The Famicom outputs in composite straight from the video chip so the only way to mod it in is to add a bunch of stuff on top. This also means that the developers didn't have access to anything above composite. In fact, only the NES and New Famicom had composite out of the box even, the original Famicom was only RF and I don't think there were special developer consoles that had composite.

In NTSC land, S-Video was all you had, outside of RCA jacks, coaxial or antenna. RGB wasn't an option. S-Video was barely an option. I forgot when composite became a thing. But it came much later than S-Video.

The Genesis really had poor video options in North America. It was either RCA or Coaxial/ RF. No crystal clear RGB here.Nintendo did release an SVideo cable for the SNES called the SVHS cable. My dad bought one when he bought me and my siblings and SNES for Christmas. I was able to use s-video on a 32inch TV and the picture quality was nice. I even used that S-video cable on my N64.

I have a Dreamcast RF switch as well as an original SVideo cable. I know I have RCA cables for this too, as well as a VGA box. Dreamcast has so many video options. SVideo looks great with this machine and it is the nest best thing to VGA. But I use to plug the VGA cable into a 17inch CRT 1600x1200 75Hz monitor too, and Soul Calibur and Crazy Taxi looked amazing on it. But SVideo isn't far off. RCA looks like shit.

The reason you use SCART is because it's widely available. BNC is only on PVMs, DE-15 is really only for VGA which has a refresh rate incompatible with TV standards.

Well, this surprisingly less horrifying than I was expecting. The signal is visibly noisy but the actual image is at least on par with Composite (in fact the colors might even be slightly fuller, falling somewhere between Composite and S-Video). Audio isn’t bad either. If the signal wasn’t noisy I’d say it’d be a decent option.
