Good question...
Sometimes I feel sorry for younger people who weren't there back in 1991 to actually experience Sonic when it was new, before all the furry and autistic madness that came after thanks to the comics, Sonic Adventure, the internet, etc.
I think it's possible to get into Sonic now (in which case I'd recommend starting with Sonic 1 on Mega Drive), but I don't know if your brain would be able to separate the original game from the shitshow that's modern Sonic in general. I hope you can.

No, the fans have already walked into every landmine laid by Sonic Team and Sega. The path forward is clear now:

Sonic 1 -> Sonic 2 -> Sonic 3 & Knuckles -> Sonic Adventure -> Sonic Adventure 2 -> Sonic Generations -> Sonic Mania

Sonic 1, 2 and 3&K are kino.
Sonic CD is like a divergent sequel to Sonic 1 and is also kino.
After that, things get messy...
Sonic 3D Blast has its defenders but it never did much for me.
Sonic R is a jankfest but I personally enjoy messing with those controls/physics.
Sonic Adventure 1 & 2 are somewhat controversial; while there is genuinely enjoyable gameplay in both, there are also some questionable choices in terms of design/story, and this is generally considered the start of the modern Sanic shitshow.
I've never fucked around with anything else in the series, but I know that Sonic Mania was generally well-received (though some criticized it as too derivative).

The Genesis games are still classic platformers so I don't see why not. It's a (mostly) quality franchise.
