In most circumstances, you'll never know the difference concerning the timing and sounds, but in others again, you won't know the difference unless you experience some real hardware.
tl;dr get some real hardware first and get to know what you love, then see how emulation handles it.

Only buy what you cannot emulate. But hack the console so you don't have to buy the carts over and over and hope that once all the consoles die they make chinese ripoffs of them to go with your flash cart and such.

I'd ideally have an n64 with flashcart for it and a hacked wii to play gamecube games. Everything else I'm interested in would emulate pretty okay.

Almost every pre-sixth gen console can be emulated with near perfect accuracy. The only exception is the PS1, unless you don't mind using Retroarch.
