Thief 1 is like playing a D&D Thief and also had a long and weird development cycle that left some things in and added a lot of depth to the final product. Thief 2 stripped away all the bite and edge Thief 1 had, because it filtered plebs too hard. Thief 2 is fun, but it's entirely what you would expect. It feels like any other video game. It's sterile in comparison although still has way more soul than 99% of other games

Very much a mixed bag. Song of the Caverns is a classic and you should at least play that mission if nothing else. Personally speaking, I like all the new missions to varying extents though I understand the criticism of them.

Thieves Guild is kino on second playthroughs when you know what to do. Mage Towers has a cool setting but it drags on way too long. Song of the Caverns is okay, I can take it or leave it.

Seemed the other way around, in my experience. In the various horror and tomb raider style missions of Thief 1, stealth was basically meaningless outside of very small moments, with most of the challenge in those levels being the hazards and puzzles, instead. Theres even a mission that requires you to kill every haunt on expert, which in itself goes against Ghosting.
Where as Thief 2 has missions that literally fail you if you knock out too many guards, or even get seen.

Poor wording, but great analogy.

T1 and D1 have a rock solid design with some misses here and there, but overall they're a unique and groundbreaking experience.
T2 and D2 still have bits of that inspiration left, but they compromised their potential for innovation to cave in for fan demand.

In Doom's case they dropped the maze designs to cram more monsters inside shooter arenas, and in Thief, they dropped the supernatural and aventure elements to have a straight forward thief simulator.
