In Ghosts 'n Goblins (at least the arcade version), if you fight a Red Arremer for a minute without killing it, it mutates into a super-aggressive "White Arremer" (pic related).

Also, Megaman series was one of my favourite as kid because I loved the challenge.

Some people revel in the difficulty, though. It feels good to have a game make you its bitch, because you get a rush when you finally beat it back down.

Early game SoTN in the Alchemy lab, there is an area with red skeletons and an elevator. I tried having them walk over the button for it, and then jumping up the platform. I never worked. I only found out recently that you can kill them ON the button, and it stays pressed, so the elevator goes all the way to the top. Then you can get the Combat Knife there. Knives and knuckles in that game are low power, but insanely fast attack. If you get close, pretty much anything is dead.
