The problem is it's far more common to have "what I saw" depicted in a sprite, and the twin witches defy the expectations of the GB Zelda art style with their big bulging eyeballs and massive crone noses (the "what I saw" turns them into cheeks and beards respectively). A lot of this stuff got smoothed-out by the composite output. Therefore, you wouldn't see the bare pixels very much and the image would be smudged.

I could go into how many modern pixel artists either miss the point due to that issue, or they miss the point and end up making really good pixel art in a different style than the "old days", a more "square" style where the raw pixels are bare to see, and I end up liking the style. But that is very rare.
