I see some of the best ones were already suggested, so I'm gonna go with the easy one and say Samurai Warriors. There's not much depth to the combat, though. Genji: Dawn Of The Samurai is also a decent 5/10 game.

Kensiden, Samurai Shodown. You fight dead samurai in Sengoku. I don't know why, but Ninja games were much more common. Perhaps the sprites were easier to make.
