I dug out my old PSP and installed some emulators.
I haven't played either of those games yet, which one should I start with? Is one of them "better" than the other?

Link's Awakening, non-DX version 1.1 is best (actually less buggy than 1.2). DX breaks the difficulty level and forces you to be a THIEF if you want 100% completion.

One of the collectible photos requires you to steal from the shop which makes all NPC call you a thief for the rest of the game. If you are not completely OCD it is not an issue.

About the difficulty thing I don't remember about it, maybe someone can explain it on detail.

the only thing that makes it less difficult is an optional dungeon you can go through after the third real dungeon which rewards you with either a red or blue tunic which doubles your attack or defense respectively. you don't have to do it at all, in fact you can play the game without ever knowing about it, playing it straight through like the original. as someone who has owned and played both excessively, i can honestly say that DX is a better game objectively, the colors really adding to the experience and no other changes that you have to see (besides the camera dude) happening whatsoever.

The new color dungeon gives you either double attack damage or double armor.

You need to steal from the shop to get one of the photographs, and that hurts the ending by renaming your character.
