Well, my machine is NTSC so there's nothing I can do about that. And apparently it's one of the models that can't be converted to PAL with just a jumper/switch like some of them apparently can? But there's a software switch I guess? But it requires a newer Kickstart than what I have (2.05)? Or something? This is all brand new to me, didn't expect I'd ever own an Amiga so I have a lot to learn. I also don't know if any of my TVs would even support 50 Hz.

* 1MB trapdoor expansion (for 2MB chip, the most basic expansion for A600)
* Serial cable (for file transfer)
* PCMCIA ethernet (Grab a ne2000 card like Linksys EC10T)
And it would help you a lot with whdload (to fit games in ram and to have reliable exit key functionality via VBR) and overall performance (by new cpu or by having fast ram at all) if you got a cheap 68010 or 68020 based expansion with Fast RAM. They clip on top of the onboard CPU.

The Chaos Engine 1+2 are very good, but they're not exclusive. Better version can be had with and AGA Amiga or CD32.

As has already been mentioned way up, try Zeewolf 1 and 2. They're basically Desert Strike only in full 3D with a lot more interesting gameplay.
As in DS you have to take out enemy vehicles, and rescue P.O.Ws. What makes it more interesting is you're often given limited resources to achieve this but you can also winch other vehicles into battle to do the fighting for you, and on some levels you can remote control tanks and other helicopters with unique abilities.
There's pretty much nothing like these games on any other format. If you do play it's easier to use a joystick, but if you're hardcore you can use the mouse for greater control.

It was relatively popular in Japan from what I understand —at least as popular as you could expect something like that to be. No commercial software that I'm aware of, but there's a ton of "homebrew" for it, and I've read that some devs in Japan's game-scene got their start with it, but I cannot confirm that obviously. I've always wanted to get a keyboard and BASIC cart for dicking around with.

If we are talking things that never relesed on anything else than Amiga, than Ruff n' Tumble, Black Viper, Uridium II, Banshee (it is highly praised and i don't know why, it is not that good. Still good, but there are better shmups on the system), Agony, Shadow of the beast III - from the top of my head. There are some exclusive shmups and racers. You can try Final Odyssey: Theseus vs Minotaur, it's a late 1997 title but rather pretty. Almost every FPS released on Amiga is exclusive for it

Most games used more buttons, but they were relegated to the keyboard.
Old joysticks had suction cups underneath and could be mounted on a desk. With that and the keyboard you had makeshift arcade style controls.
At least this is how I and all the amiga users I knew played back in the day.

Tablets were around even back then. The workflow was different from nowadays, tho.
Not layers like in modern photoshop, but tricks with palettes, locked colors and stuff like that.
But that's just some basic understanding. I can't fathom how the artists got things done to this degree of quality.
