What difficulty is this game the most enjoyable on? I did two stages and found it somewhat challenging and then I found out I was playing on easy (US version). Bumped it up to normal and the first stage was fine but I'm worried about what comes after. Also this game in general is way harder than I thought it would be.

you can't get the good ending on easy, so... yeah.

The Child setting gives you a gimped ending. The Hard setting makes you die in one hit, with only one life to start and no continues.

Stick with Easy or Normal for now.

US? I thought easy was normal difficulty in that version, and Normal was actually Hard
You need to beat "hard" to get best ending. I think in PAL version it was easy, normal, hard, hardest and then Crazy Hard difficulties. Crazy Hard was unlockable by cheats or beating the game on hardest and is a mode where you die in 1 hit and start with 1 life and no continues.

The game will mostly require retries, some stages will get annoying and you need to memorize shit because unexpected shit will happen to fuck you over.

I find it enjoyable on normal but it is really the "hard" difficulty, and that's only because I've played it a lot back then. They renamed the difficulties from the Japanese version in the US version. The challenge is part of the process but keep at it. The game will throw new things at you through your journey, but the mix of charm and challenge makes it great.

The American version was the first to come out, and possibly like Sonic 1's situation, they might have kept working on it before the Jap and Euro versions came out. I wonder if the extra/modified difficulties were made after the US version was released, then.
