Be wary of those replacement sticks. They work fine and all (I got a Gamecube-like stick awhile back), but some of them can reach outside the range of sensitivity the system recognizes. You shouldn't find any problems with those games, but you'll find that if you attempt playing anything like Mario Party 1 that the stick-spinning games won't be winnable in the slightest. If the original sticks seem elastic enough, I would hold off on replacing them. Hopefully that steel stick project releases soon

Honestly I haven't bought too many replacement sticks myself, as I've gotten lucky with my second-hand purchases.

These seem fine, Hyperkin is a pretty big name in the 3rd party controller realm so again, fine. In my opinion it's always better to go original. On multiple occasions I've had the sticks snap in half on those 3rd party replacement controllers you find in blister packaging at game stores, and I like to think that I generally don't handle my controllers roughly or anything.

That being said, 30 for 4 sticks isn't terrible but I would (myself) go out of my way to only order 1 for the time being to see if ordering more would be worthwhile

I've got one with a gamecube stick, it came with my N64, and it mostly feels fine, but it does drift once in a while, almost like the dreaded joycon drift of modern nintendo consoles... only difference here is that L + R + Start completely fixes everything, but it is annoying that it's something I have to do so frequently... beats having a completely loose stick that grinds down to nothing I guess. Banjo Kazooie Jiggies of Time is the only one I can think of, I only play games that run on real hardware and most hacks don't do that. I guess there's an F-Zero X hack that remakes the japan only GBA game F-Zero Climax, though that's not really "new"

most of them don't, SM64 hacking is usually done with emulators in mind rather than consoles, and they always exceed the limits of what an N64 can do.
Super Mario Star Road runs on hardware thanks to some edits from Kaze but the framerate dips really badly and I personally don't think it's very good.
Super Mario 74 also is apparantly console compatible but i've not tried it yet.
Super Smash Bros. Remix is a console compatible hack, it doesn't add any new modes or anything, but it has a ton of custom stages and characters, most of them are clones or semi clones like Dr. Mario, Lucas, Ganondorf, and Falco, but Wario is in and he's basically a brand new character, there are many more planned as well. You do need an expansion pak to run it though.

I always felt that an N64 sidescroller with the SSB control scheme would be quite, dare I say it, kino. I guess Tendie's mindset at the time was (with some exceptions) to go all-in on full 3D to set them apart from the PSX and Saturn. On the one hand it's too bad we don't have more 2D and/or sprite-based N64 games, but on the other hand, if we did, I might not have ever gotten into SNES, at least not back then.
