The current speculation is that Super Donkey was being worked on as a Super Donkey Kong/Donkey Kong 4 when Rare began work on Donkey Kong Country. Nintendo went with DKC, and Super Donkey was repurposed into Yoshi's Island.
If nothing else, Super Donkey being repurposed into Yoshi's Island makes sense.
As for Yoshi's Island itself, there are at least two prototypes of the game but I don't have links to either of them. They're virtually idendical to eachother aside from music: one has Super Mario World placeholder music, and the other has the final yoshi's island music. It's otherwise fairly different from the final game, with different levels, controls, and physics.

The archives for these aren't super well organized, so there's probably a chunk of stuff that we have but don't know that we have. A pre-final Street Fighter II Super Famicom build (of all things) was found in the directory for the source code of the German version of Link's Awakening (of all places). I don't personally expect that anything else huge is still lurking in the currently released data, but there are probably a handful of bits here and there that could take some time to track down. Tile graphics are usually in .CGX files. Map data is usually in .SCR files. Palette data is usually in .COL files.

You can open the .CGX files in a tile editor like Tile Molester or YY-CHR.

Getting the palette data loaded is a little trickier. You can open the .COL file in a hex editor, copy the first 512 bytes, and paste them into any ZSNES savestate at the address 0x618. Then load the palette into the tile editor from the save state.

This probably doesn't really matter, but I think the tool the devs used to make the CGX graphics files displayed them in 128x128 chunks rearranged into a 256x256 image. 1st chunk becomes the upper left, 2nd upper right, 3rd lower left, 4th lower right. Pic related shows two examples using Zelda tiles I posted earlier.

I didn't really have to do much arranging. The tall strip versions are unmodified. A lot of the sketchier WIP files like these are in 8bpp format, meaning essentially that it's a full 256 color image instead of a bunch of 16 color tiles, so once you find a palette that works the whole file is colored correctly automatically.

Interesting! That rules out it being related to the Koizumi demo, at least. Though it makes me wonder why those sprites exist when they already should've been knee deep into development of ALttP by July '91. I was also surprised to learn that Yoshi's Island was being developed that early as Super Donkey, and the shading style and black outlines of that sprite remind me of that. I wonder if they were drawn by the same artist.

Funny enough that's exactly what happens to some of the tracks in Double Dash, Wario Colosseum is on average a 5 minute race. Still they never abandoned the idea of racing through a city, plenty of Mario Kart games after 64 have tracks where you do just that like Delfino Harbor and Daisy Circuit.
