Its not about a lack of the sound, it's about how spelling dictates how you think something is pronounced in your given region. I oversimplified, sure, but at least in north america most English dialects/accents dont have /e/, but rather /ɛ/. Often times they'll hear /e/ and interpret it as /ɛ/ or /eJ/. In other places it's probably a bit different.
Not to mention the a at the end gets turned into /ʌ/ or /ə/ (the vowel in butt) and y'all don't get up in arms about that.
