I oversimplified, sure, but at least in north america most English dialects/accents dont have /e/, but rather /ɛ/. Often times they'll hear /e/ and interpret it as /ɛ/ or /eJ/. In other places it's probably a bit different.
Not to mention the a at the end gets turned into /ʌ/ or /ə/ (the vowel in butt) and y'all don't get up in arms about that.

Besides, if someone says either of those you know what they're talking about, so it's fine. Again, y'all a bunch of babies.
