The term "age" is indeed pretty stupid, "outdated" might be more fitting, semantically etymologically.
But in the end, it doesn't matter, because 99% of the times someone says a game has "aged" or is "outdated"; they're just being biased by whatever bullshit modern standards they might have, which will soon be outdated too, and in the end it just means "thing I didn't like/didn't get".

I suppose everything "ages" physically, as time goes on. When people say a game hasn't aged well what they generally actually mean is the mechanics of videogames are different now than they were in that game. Movies, books, and music always use the same "mechanics", if you will (since you're so hell bent on comparing the mediums). They don't age badly, videogames have just advanced on a technical level. The only thing that "ages" is the industry itself.

Technology marching on is not the same thing as the aesthetic and ludics of a video game marching on. Leaving aside the fact that technology does not even have a per se linear progression in its actual application in games (see the transition from 2D to 3D in graphics), you cannot definitively say that the way people play or make the rules for a certain game is better now than it was 20 years ago UNLESS you can show how a contemporary method achieves the same end as an older one but better. I think lives in console platformers are a good example of this--they are basically unnecessary as a mechanic and it took until relatively recently stop using them for the better.

Except some movies do age poorly.

Go back and watch some late 80s/early 90s action flicks that sold well, or most 60s/70s westerns. Bad SFX, cheesy action scenes with no semblance of realism. Outside of a few classics these are unwatchable by today's standards.*

'Age' is simply slang for something that 1) was popular at the time but in retrospect was shit, and this is highlighted by advancements in the genre (e.g. Resident Evils tank controls) or 2) Has been incorporated / refined into subsequent games so there's no reason to play the original (eg SMB3 vs 1).

*And I'm really over the modern cinematography technique of hyper zooming in on actors and switching cameras every 2-5 seconds to create the illusion of action. Even WWE is doing this now on TV.
