You could go for records and master the scoring system. Some games are very rewarding in that regard, like Radiant Silvergun. Clearing is hard enough, but finding some other people for friendly competition to breathe some life into the games.

Also find ones with interesting mechanics. Mars Matrix and Battle Mania come to mind.

It's standard for jrpgs to have intros like that to set the scene and world, to give you direction. Afterwards skipping dialogue and cutscenes is very fast and easy. Remember these games take dozens of hours to complete. So 10minutes at the start, and then 10minutes in the middle [when a plot twist happens] isn't such a big deal. Specially if you are enjoying the story and are fully literate.

Also PS1 Squaresoft games aren't the norm for retro jrpgs, they went overboard with exposition in some parts, sure. But that's only a big issue if you are replaying them a lot and know the story and dialogue already. If you look at most retro jrpgs they didn't invest so much space writing dialogue.
