Also in Australia as kids the level bosses we called "Masters" as in "did you beat the 3rd level Master yet?"

I loved this game as kid. Much like Double Dragon 2 on the NES, the true final boss only appeared on the highest difficulty.
When you reach the end on beginner or medium you face pic related, which is a palette swap of an earlier boss, however...

When you play on Expert you face this ugly motherfucker. He's much tougher and makes for a tense battle.
As an added bonus you get a secret power-up halfway through the battle, which made me grin from ear to ear as a kid.

One of my most remembered would probably be Icon Of Sin in Doom 2 : Hell On Earth
I only mean that in an aesthetic and conceptual sense, because as an enemy encounter he's actually marvelously dull (the Arch-Vile monster is far more interesting in terms of gameplay), but I really love this idea of this absolutely ENORMOUS super demon, bigger than the level itself, his huge teeth, his huge downward facing horns, all the cybernetics wired into his skull, with the big graphically violent hole bored open in his forehead, stretched open by meathooks, where seemingly pure evil magic rages, and he summons or even creates demons by the help of it.
Add to that the evil backmasked chanting, and how to win you need to reach to fire your rocket launcher into his brain through said hole.

In terms of just gameplay, I think I'll have to give points to the giant caterpillar fucker in A Link To The Past, because he manages to be consistently bothersome to fight even if you're really used to the game and you've beat it countless times.
Even advanced speedrunners, who memorize shit by frame, seem to frequently get bumped off the platform.
