Really didn't like the graphics of these psp remakes. Wish they could'a gone for enhanced redone 2d sprites and background(or had a vanillaware esque looking Castlevania game)

The graphics looked great on actual hardware.
Of course, when you stretch them to 10X the resolution they're going to look awful, but that's not really rocket science.

Having the original Rondo and Symphony of the night on the go was pretty neat

Definitive version of SOTN; also.
Also the remake is pretty sweet, the redesigned level 5-b is better than in the original, has more boss fights, more secret areas, and a challenging Dracula fight.
Also customizable soundtrack, boss rush mode and even ad hoc co-op gameplay for the boss rush mode.
Dracula X Chronicles is underrated.

Funnily enough, Castlevania 64 has a lot of Rondo references. You can choose between a whip user and a magical girl, and there's even a secret Maria dress costume you can pick for Carrie (only in the first CV64, not the director's cut).
Also the title screen music of CV64 is a violin arranged version of the first level in Rondo of Blood.
Boss music is also arranged boss music from Rondo.

did they add something besides the new translation to SOTN?

PSP SoTN has playable Maria, and a completely new version at that, she plays differently from the Saturn version, it's more or less a hybrid of the PSX and the Saturn version.

New translation and the option of having the original japanese voices with subtitles.
Also added playable Maria (different from Saturn Maria, this one uses her Rondo moves/animal friends), 2 familiars that were originally in the japanese SOTN but removed overseas, and changed "I Am The Wind" for a new instrumental piece by Michiru Yamane as the ending theme (which suits the style of the music in the game better, even though I can see how IATW was "special" for its different tone), nevertheless it's cool we got a new Yamane track thanks to this game.
