When is quality-of-life improvements too much and breaks the Soul of Retro Games?

It's a tough call, one change may make a lot of people happy and others grumpy. One thing that most can agree on is graphics, if you change the artstyle completely you lose the original charm completely.
As for gameplay changes if you remove tedium most players will be grateful however if you mess with the original challenge or difficulty you risk upsetting everyone.
Beyond any sort of changes you can introduce to a game one thing that all devs shit the bed on is not having a choice in any of the changed aspects, which results in drastically varied experiences and thusly a different game altogether.

What gives old game the Soul? I would say it is the Love a dev put in his Product. Nowadays games are only made to make money. In the old era of video game development, devs worked on their products not to make money, or at least it wasn't their first thought when they started.
When you put love into a product, you put a part of your soul into it. People can feel it, see it sometimes. Everything from the art down to gameplay was made for a reason like this and when you now remake those old games, you take away a part of the soul that was put in. Almost all new games look and feel the same now because the so called quality of life changes are always the same. Only focused on that one specific group of gamers.

What a casual gamer would call Quality of Life is basicly nothing else than a Better for You to play. The You in this case is only based on that one group of gamers who only can enjoy a game when these things are in.

Soul is a very subjective thing, I would say that all games hold certain aspects to it that you might call the spirit of a game.
All games are made to make money, sometimes games chase them so much they impose on the potential that the product has.
Love is another subjective concept, all video games are a passion project with certain artistic liberties and timeless aspects.
Enjoying a game all lies in the eye of the beholder, I'm sure you agree, one game might be fore some but not for others. Quality of life to me implies respecting the audience, not making them feel stupid or stressed unnecessarily, not to say games shouldn't be challenging but that the difficulty in a game shouldn't come from faulty game design. I'm sure you'll agree that a camera that gets stuck behind objects, or various glitches and bugs are problems that need to be patched out and looked into during play testing. However the grind of a gameplay loop is often the hotly debated topic, where one person sees an immersive experience another sees busy work..
In order to create art that stands the test of time all the mechanics of the game needs to work cohesively, the gameplay must call players back to it from time to time due to its merits and its lack of imitation. Lots of games that were amazing for their time lose its returning audience over the years because bits and pieces of it are replicated elsewhere utilizing modern technologies.
The simplest answer is that the Soul of a video game is something each and every gamer projects and imbues into a product, ultimately it's the players and the passion they feel about games that drives them to talk them up and garner more players like them to give them a go, sharing their experiences and memories with one another.

Save everywhere started it all, and it became worse when emulation did this too with save state.
It got too easy, there was no more challange when going into a boss fight or looting and leveleing around.
You just would save and booom thats it.

yes, the community who loves the old games seems to know what kind of Quality improvements should go in! And this is strange to see that AAA studios seems to fail.
Also, how much of Quality of life is ok? The way the community does or the way the AAA studio does? I would say, AAA studios know jackshit and have no soul because they are too much focused on money.

It's a fuckin hard to draw a line between a convenience tweak and a big modification that hurts the games original spirit. I'm a big fan of adding simple things like maps and hotkeys for spells, extra save slots you know, shit that would make the game a deluxe version if the devs had the time for it.

Soul is pushing the envelope beyond what's possible. A great looking retro game has much more soul than if that game, exactly the same, was released on a much more advanced system.
