Anything goes, just grab Sh1 and Crusader 1. Both will ease you into them well enough and the games themsevles are not hard to grasp.
Stronghold 1 has one infamous mission somewhere 2/3rds into the game, but isn't very difficult otherwise. Crusader 1's historical campaings are in essence just one long and elaborate tutorial, the first crusade teaches you the basics, second how to handle commanding the new Arabian units, third on advanced castle buildig and fourth on Skirmish -- which is the real draw of Crusader.

Which one is that? I played through the campaign, but it was a looong time ago, and the one I thought was most difficult was that one where you have to take out the Pig's castle in the time limit. Is that the one that is generally considered infamously hard, or was it a different one?

Although there is a recently released fan patch that takes all restraints from the AI, and there have been tons of alternative fan made castles for each and every one of them that likewise make them more powerful by giving them a more efficent economy.
Interestingly, the Sheriff seems to be the one who benefits the most from this. He has a lot of potential and if given a great economy he recruits like mad, but this isnt really seen in the basegame since his castle is a meme and he can get wrecked by a single spark.

If my memory plays me true (and it's been well over a decade, so it might not be), there was this little hill you could park your few starting archers on, and clear out a portion of the enemy walls where you could shoot them but they couldn't shoot back, but you did have to manually direct your archers to shoot. From there, you could climb some people up, start clearing out the front walls, and then bring up your missile troops to fire at the guys of the wall of the inner courtyard. It was only really hella-hard because for a long while I listened to the advice it gave you at the start which is quite frankly terrible.

In the unpatched version of the game, there is a quite funny bug you can abuse.
Tunnelers are never targeted by ranged attacks. Archers and crossbowmen will not fire at them. So you can send some men on a suicide mission to clear the moat and then have the tunnelers wreck each enemy tower individualy, removing the main advantage the defenders have.

Rush is out of the question on this map because its on the crusader setting, everyone starts with an sizeable army. And its made even worse since the AI has maximum advantage in the settings, so both Lionhearts will spawn with huge forces of archers, swordsmen and pikemen.
The player gets like 50-60 archers, a few swordsmen and 2-5 knights if european, arab archers and arab swords if Saracen.
