You've got to balance authenticity with frustration and ease of use. Things like lag, incorrect aspect ratios, lack of CRT, too small of display, and uncomfortable seating will cause people to lose interest.
You want a comfy couch or chair, good solid controllers, and a way you can get the game going without having to worry about crashes or needing to configure 20 different things.

The most important thing in the set-up is actually you. You have to pick a good game ahead of time or have a few picked out and let them pick from them. Massive rom lists are not a good thing. Then the game has to instantly start and be playable. No fucking around configuring controls, video, etc, etc. That will annoy players and cause them to lose interest.

Screen under 19" is a no-go.

Good speakers are highly underrated.

Honestly, you’re going to want a 256 GB SD card filled to the brim with emulators and roms. No one is really interested anymore in doing couch gaming, let alone couch gaming for modern games. HOWEVER, there have been moments I fond myself in the vicinity of someone’s laptop or a computer space nearby and I have been waiting with friends for time to pass with nothing better to do. This is where the emulator on the SD card and a couple spare bluetooth controllers come in. Of course, you need the pads to be small to carry, but that’s for you to figure out. I pulled this out one day and it got everyone’s attention in the computer lab. Almost everyone passed by and huddled around, young and old, for a few minutes to play a game. Yes, it’s emulation and you’re playing on an an LCD, but I would be lying to you if I said I didn’t have one of the most fun experiences since I was a kid. My suggestions:
N64 party games
PSone fighting games
Side scrolling beat ‘em ups
Namco classics
Kart racing games

I have game nights at my house, I give people tons of options with various systems connected to CRTs and flatscreens. Some people even bring their tvs. I got a few osscs, but not always all the cables.

It's become a popular hangout for just some rando's house like mine, have even gotten a few games donated like SamSho 2.

Huge focus on Sega games and fighting games, or straight up Mario Party.

Depending on the circumstance you may want to not leave your arcade sticks in plain view. Particularly if they are custom or expensive sticks.

People get intimidated by this sort of thing and think you must be a tournament player, and in turn people who have low confidence or self-esteem will not speak up and ask to play because they do not feel worthy. The competitive atmosphere makes them uncomfortable.

On the flip side, the presence of these objects may also say your setup is meant for actually playing, rather than looking like a pretty collection.

From my experience: Times where you get the chance to play retro with friends are rare and far apart. In those rare chances, if you take too long for things to get fun people loose interest. Somz bullet points:

- have your setup ready to go (as in plug controller, turn on and is ready to play). Either at all times or have the console you want to play ready to go

- think in advance what to play. For example i have this friend whos not much into retro but he loves dragonball, so i got a couple dbz games ready to go and we ended up playing all kinds of games starting from that

- get stuff with 4 controller, especially the n64 woth mario party games and the like. Make sure all the cables are long enough to get to the couch, noone wants to sit in the floor

- good old big tv is mandatory

- sometimes no matter how good the chance is, your friends wont feel like playing retro, there will be another chance

- have fun and make sure your friends are having fun (and be a good host, drinks and snacks a little bit after you start playing)

- make gameplay brakes

The point of Low Level emulation is so people can reverse engineer it and implement the fixes into faster, inaccurate High Level emulators. Just like how SNES9x ended implementing some of the BSNES/Higan implementations.

I bought an Nvidia Shield TV, hooked up it up to my 60 inch flat screen in the entertainment room, and bought a couple of extra Shield game controllers. That works perfectly for playing retro games with my friends.

Let's be honest here, most of us don't have friends who are autistic enough to care about a little input lag. It's all about reliving the good old days and playing the game.

I've had multiple friends come over, drink a few beers, roll a joint, and fire up the emulators to play 007, Perfect Dark, Turtles in Time, Bloody Roar, Power Stone, and a bunch of MAME arcade games and have a blast.

And yes, I have all the old systems from the NES to the PS4 and everything in between. Only difference is that I put most of them in display cabinets because I can't be assed to go out and buy a huge shitty CRT and keep all those systems hooked up on the off chance I have company that will want to play Double Dragon.

I have a shit setup in my garage with a 32” crt, a beer fridge, and seating for about 6, we usually just binge drink, but it’s not uncommon for someone to see my stuff and ask what games I have.
Having good 2 player games is a must, the common ones we end up playing are either NBA Jam(genesis) or Street Fighter 2(SNES). Occasionally we’ll do 2 player SMB3, but usually the Vs games tend to see more rotation. We had 5 people, including my 8 year old(who beat everyone’s ass) on SF2 last weekend and it was a good time.
Basically, when my friends come over we may or may not play games, just depends on the mood, but it’s nice to have it handy if we get the itch.
For example, this coming Saturday we’re doing a wings and beer night at the house and it will probably end up in gaming if we don’t get too drunk.
You’re welcome to come by if you’re not too much of a sperg and bring some of your own booze to throw in.

Get an old modded xbox with 4 controllers on a CRT screen. Every game emulated up until PS2 (except Saturn ofc), and you can play them all locally with 4 players. I would often play MAME on it with my friends
