Those are BNC connectors, industry standard for professional use in analog video. Has a locking mechanism so your cable doesn't get loose or disconnect.
Use RCA-to-BNC adapters, or get BNC compatible devices (hard thing for retro gaming- which uses consumer standards like RCA, S-Video, and old-as-fuck twin lead connectors)

I like the old article where they had audiophiles listen and tell whether there was some really expensive wires used to connect the speakers, or coat hangers.
