Bottom right doesn't even make sense, because the platforms are supposed attached to trees, or are tree branches (see bottom left), but now they're just pieces of wood floating in the sky (???). Also the foreground tree leaves are still there even with the tree gone.

I'm not a Kirby player but I've seen very elaborate comparisons before. What makes they terrible comparisons, even if I agree "new = bad", is that they go into autistic rants about how the remake doesn't match the original, when the genuine issue is that the original was an NES game that had very simple and pleasant graphics, while the SNES remake has very complicated graphics that at times try to be photorealistic, but this makes them look terrible by comparison.

The goal of a remake is to further flesh out the aritist's vision they originally had in mind but couldn't implement due to technical limitations. Removing a tree at the end of a Kirby stage but leaving the branches and leaves floating in mid air does not suit any better aesthetic purpose and honestly looks like a bug that they couldn't be bothered to fix.

The goal of a remake varies depending on who makes it, since not everyone returns for a remake.
Naturally, this means that remakes vary in terms of how and why they change things. Sometimes it's to flesh out what the original devs couldn't do. Other times it's to upgrade the aesthetics to a series' current style or modern looks. There are some that are practically passion products. And yes, there's also the "quick buck" mentality.
Still, there's a stark difference between what Super Mario All-Stars and Nightmare in Dream Land do compared to, say, Sonic Adventure DX or Evolution Worlds (to give 2 examples).

Readability is one of NiD's biggest problems, as you said. The jpg compression is making the GBA levels look far worse than they actually do, but there's some environmental features/effects that may be harder to read/judge due to the changes as well, like the Laser ability bouncing off angled surfaces. The extra detail makes some of those surfaces harder to notice.

Butter Building losing its 3D rotation effect on the GBA was utter bullshit though, especially because it should have been arguably easier to reproduce

I actually never liked the shine they added in Superstar. It wasn't there in Dream Land or Adventure and I think it looks wrong. I always saw Kirby as a marshmallow-like puff rather than a rubbery balloon.
