Are there any other badass mech platformers like Metal Warriors or the Assault Suit series? It seems like such a niche and neglected genre.

Probably, I haven't played it but it sounded like what I was looking for. That and like, maybe one other game I can't remember are the only games like this. Every other platformer that involves running and shooting is just Contra or Megaman or something like that.

Metal Storm is pretty good. Xardion is interesting but pretty mediocre.

Metal Slug counts when you're in the tank because it can jump.

The genre kind of dies when we get to 5th gen because we get to rub sweet 3D mech simulation all over our faces from Ghost in the Shell and Armored Core

They're quite different really, but these are two of my favorite games on their respective systems. Metal Warriors is easily way at the top of SNES for me.

It's not within the rules here and you're not actually in a mech, but the jetpack gives Dark Void Zero a very similar vibe. It's also shockingly good for what it is.
