The SNES games are my favorite. You'll need a guide for the third one though if you don't know Jap.
The N64 Goemons are also very good, as is the GBC game.
Stay away from the Sony Goemon games and the Gameboy game that got localized as Mystical Ninja Starring Goemon in America.

Which Goemon games are fan translated into english and which ones can I enjoy without knowing any Japanese? I can read kana but I don't think it's going to help me a lot when playing japanese games if I have to converse with people in towns to progress.

I know this sound like elitism but the konami translations, as good and professionally made as they are, are pretty much re-writes that make a bunch of shit up that's not in the original text.
Goemon has a bunch of edo period mannerisms that cannot be conveyed without making TL notes like conjugating verbs with nuru, ending sentences with sa or the whole teiandee catchphrase.
