They're battle-only Pokemon games. No story, no walking around a map, just sign up for different tournaments (with different rules), and fight away.
It's best enjoyed as a suppliment for the GB games, as a sort of post-game content.
Stadium themselves are also great tools for playing the GB games (better item/pokemon/TM management, better storage system). You can also get rare pokemon from Stadium, like starters, eevee, fossils and hitmons.
Also Stadium doesn't fuck around, it's hard. Playing with the rental monsters the game allows you to use is ridiculous, you will need your own monsters from the GB games.

The games play similarly to the gameboy games but obviously there are animated pokemon battles. You can rent pokemon in game so you don't have to link one of the gameboy games to play but the battle tower is hard as fuck and you probably wont go very far with rentals alone. The game also lets you play the gameboy games on the TV in the gameboy tower.

RBY/GSC don't have a lot to offer after beating the E4/Red and collecting all 251 Pokemon.

With Stadium 1/2 it offers a lot of additional battles and minigames, and as other anon's mentioned you can obtain a few unique Pokemon from beating the content within these games.

Including a Gligar that knows earthquake, if I recall right.

Everything's preset levels for the most part (usually 50 or 100). There are Pokemon already available with shitty stats and preset moves, but you can and should use the ones you raised on the cartridge. You can play the Game Boy Pokemon games on the N64 like a Super Game Boy (2x and 3x speed even unlockable).

The CPU will read your actions and act accordingly. For example, if you're up against a Zapdos and have a water-type, it will naturally use Thunderbolt if you don't switch. But if you switch to say a grass-type, Zapdos will use Drill Peck the SAME turn. A human opponent wouldn't know to use it until the switch has actually happened.

It's pokemon red and blue post game.
3 pokemon only, and you don't get to swap out before your foe sends in the next pokemon. The AI can be a little more challenging than the typical story mode character.
I only ever played the original Pokemon Stadium, but it seems like the sequel has a load of interesting tourneys with restrictions, where you have to only use pokemon under a certain weight or something.
There's some amusing minin game distractions, really boggles my mind that they have yet to make a full game out of the concept. It'd be a real Mario Party killer.
If you have a gameboy game and a transfer pak, you can use your own pokemon in the battles, store them so you can start a new game without losing them, as well as organize the pokemon and use items on them in a speedier fashion than you could in the gameboy cart. Also a way of gifting friends a pokemon without needing to catch a shitmon to trade off.
You could play the gameboy game on your TV, and if you've made progress in the stadium mode, you can play it at double or triple speed for less painful level grinding. There was a more challenging version of the pokemon league, you could earn prizes like the starters and other missable pokemon, and pokemon with special movesets, and it all ends with a battle against a souped up Mewtwo, which triggers the credits scene.

It was good shit. Beats the post game of some of the modern games.I've been meaning to replay I'it but I don't want to play the gameboy game at regular speed, but I don't want to play the game itself with rental pokemon.

When people play competitive Gen 1, as weird as it is some people do, Pokemon Stadium is used exclusively because it fixed a lot of bullshit. One of the biggest changes is that if you kill a opponent with Hyper Beam you will have to recharge on the next turn, something which you able to bypass the recharge. This gave Tauros basically a free win against anything not named Chansey, Golem, and Rydon, not counting Mew and Mewtwo. Even still things like Tauros and Alakazam still tear through most other pokemon.

I used to play Gen 1 competitively a bunch, cartridge rules were almost always used for simulator battles. I haven't played in a few years, but it looks like Pokemon Showdown uses cartridge by default and it's still the standard format for Pokemon Perfect, which is the main competitive community these days (at least it was when I stopped playing). Pokemon Stadium was played exclusively for a while on Pokemon Online before they added the cartridge rules, but afterwards cartridge became the default and Stadium wasn't used as often.

The animations in the 3DS games are stupidly disappointing. When any pokemon takes damage all they do is flinch a tiny bit.
