There should be a distinction between single player and multiplayer. There are droves of games from many genres with infinite replay value in multiplayer, the players are the ones that make it interesting/good. It's vastly more difficult to come up with a single player game with infinite replay.

There's no such thing besides maybe the chronological order, otherwise the games are very different. Wipeout 64 might be a good starting point since you like F-Zero because it has very responsive handling without the inertia that the other games have. Otherwise you have distinct styles, 1/XL/3 have similar kind of gameplay mechanics but 1 has been surpassed by its 2 sequels and there's no point playing it first. Then you have Fusion which is its own thing unlike any Wipeout before or after. Then you have the new series starting with Wipeout Pure the mechanics of which were used for every other Wipeout game since, albeit heavily tweaked so you're still getting a different experience if you play Pulse and Omega.

Now then, I find one game that really lasts is Zelda 1. You can enjoy that game a lot, though admittedly after doing both quests and going for swordless, I'm not sure what else to do beyond replays with progressively less equipment. The randomizer helps here I suppose.

The most replayable games for me are usually standard linear games that I enjoy a lot. Stuff like Rayman 1, Tomb Raider 1, as well as a ton of flexible PC RPGs. I've lost track of how many times I've played BG and FFT. The quality of the game is usually all that matters for longevity IMO.
