The NES uses color palettes differently than the Master System. On the NES, sprites and tiles are limited to 4 colors each. Tiles can use 4 colors, sprites use 3 with one color reserved for transparency. Characters need to be made out of multiple sprites in order to increase their color palette beyond three. On the Master system, 16 colors can be used collectively for the background layer, while 15 colors can be used for the sprite layer with one color set aside for transparency. That means, one sprite can be made up of 15 colors, but it has to share those colors with every other sprite on the same layer in the scene.

Those are not Lego blocks. They are N&B Blocks, which were made by Nintendo before they got into making consoles. But yeah, I agree that I prefer the look of the original games. Still, back in the day, it was great having all Mario games on one 16bit cartridge. I think some of the games had to share art assets with each other to save on memory space. But otherwise they were generally good ports. With the exception of Super Mario Bros. 1, which messed up the game physics a bit. But it wasn't terrible. Doki Doki Mario 2 and Mario 3 were fine.

The NES game does display at a slightly higher resolution, and does scroll a bit smoother. SMS has nicer colours and more detail. The Game Gear port has nicer colors than the SMS game because of its 4096 colour palette (it still displays the same number on screen) but has a heavily cropped screen.
