For better or worse, Western artists have a firm, or at least decent background in anatomy, while Japanese artists learn from imitating various other stylized drawings, which results in why their animations is generally more stylized than Western drawers. Exceptions of course are cartoons, but I think Japanese artists are far more interested in the cartoonish, fantastic, and stylized than Western artists are, which I think also explains partially while Japanese games are more cartoonish than Western games.

This is not to depreciate Japanese visual content, which I certainly prefer, but I think it's what would partially explain the clear differences between Japanese and Western visual art, a difference that even preceded manga, though Western art was once more stylized than Japanese art was prior to the 20th century, so perhaps the Japanese visually were simply further behind than the West was, (which started developing visual realistic art around the Renaissance, with the exception of scultures, which were realistic as far as Ancient Greece), and by the time commercial art began to be created in massive quantities in Japan, there was still an attachment to the stylized or cartoonish traditions in cases where Westeners would use more realistic art.

I would say relative to Japanese artists. Again, I prefer the works of the former, but there's an undeniable higher degree of realism in Western games compared to Japanese games. Even comparing Western fantasy and science fiction, (like Gears of War, Mass Effect, Assains Creed, sometimes Call of Duty, Elder Scrolls, even Destiny, late 90s WRPGS), with Japanese science fiction and fantasy, (Final Fantasy, Dragon Age, Monster Hunter, Zelda, Puzzle and Dragons). There are exceptions, like (WoW being more cartoonish, and Resident Evil and MG being more realistic), and I would say games for children are about as cartoonish from both, (though I think it's slightly more the case with Japanese games), but for the most part, stylism and cartoonishness pervade Japanese visual design more than Western design, and the latter is more realistic, as least when comparing the content that is sold to teenagers and adults.

I'm making a personal attack because you're response was invalid and was not the least bit substantial. Furthermore, your assumption is wrong, as I very much prefer the cartoonish aspects of Japanese visual art compared to the realism of Western art. I love this video because it goes so much into a company I think is first rate when it comes to cinematics, and this part shows one point I make to some extent. Even in a popular Japanese series like Final Fantasy, where graphical detail is at the same level found in Western games, there is still artistic freedom even in depictions of "humans," in which there are slight anotomical differences, (which were obviously much greater in previous games, though that was largely due to technical limitations).
Briefly comparing DQ and FF, they were for the most part inspired by the same games, (Ultima and Wizardy), but I think DQ was less derivative and was able to adapt those concepts, (though simplified and streamlined), but with an aesthetic that more closely fit the Japanese taste, while FF made games more closely resembling Ultima and Wizardy and DQ, with gameplay more streamlined and simple than the former two, (but arguably more complex than DQ), yet more derivative of the art style, and I think that largely explains why DQ was always much more popular than FF in Japan, and very unpopular in the West, while FF was fairly popular in both markets, while being more popular overall.
For my personal taste, I prefer in one case the less popular when comparing Japanese and Western games, but the more popular when it comes to DQ and FF, because I find the art style in DQ too cartoonish and childish.
