Kizetsu is the black sheep of the series, together with the newest Xeno.
I personally like 2R and 1/R the most, 1 has a bit of an edge because I feel the overall scenario is better realized and more iconic, but 2R fixes some of the flaws 2 had and also adds a shitload of content, so while I think 2R is objectively the superior game all around 1/R still wins out a bit personally.

Returns, 2R and 4 are the highest rated entries in the series, but only Returns is available in english, and you should play it first either way because it's the game that explains what happened to the world, and while outside of 2/2R there's no real continuity all Metal Max take place in the same world, but in different regions, kinda like Fallout.
Saga entries are something of an alternate/non canon continuity to 1 and are directly related to it, Xeno is its own alternate continuity.
It basically goes like this:

Saga continuity: 1/R--Metal Saga--Hagane no Kizetsu

The whole plot rubbed me in a bad way because it felt like the opposite of what the series stood for.

I know you're playing as Kliff's son, but Saga is also its own direct continuity since the Noa Seed plot is a main scenario for both games, both are direct sequels to 1 in their own right.

In 1 you were just fucking around. Taking out Noa was just one thing to do and nobody really realized what you had done.
Metal Saga took a compromise between them, giving you some breadcrumbs to follow while still taking the back seat in your adventures.

Yeah, but to be fair only 1 has that kind of premise, 2 is focused on your vengeance on the Grapplers, 3 is about finding your girlfried and remembering who you are, which ties directly into the main villain faction again, 4 is a retread of 2 but with a single major antagonist rather than an entire faction, Saga games are all about Noa seeds and Xeno is again, a retread of the vengeance theme from 2.
Only Saga is kind of similar to 1, and only because the big picture isn't clear until the very end, and also because it was meant as a beginning to a new continuity itself without discarding the previous one completely I guess.

After you finish the game by beating the final boss you're given the option to start a NG+ cycle, either normal or Hunter Mode.
A Normal cycle lets you repeat the game while carrying what you got from the previous file, but adds nothing, Hunter mode removes all the story portions while letting you carry over your progression and start with harder difficulty bonuses.
Hunter Mode reshuffles the content of most chests in the game by giving you new items/parts, many of those chests also contain new blueprints for new tank chassis models, many of which are extremely powerful, you also get an EXP/Gold/Drop rate boost that also gets higher the more cycles you start.
All enemies get an overall stat boost, moreover, for each higher difficuly NG+ Hunter Mode loop new Wanted! enemies are added on the map, not to mention you can farm more Nephilim Chips for the Nephilim parts you'll get later on, so you can max those out, which is impossible to do on a normal run.
To get all of the content in the game you need to do a total of four loops, the last loop, Heaven difficulty is just a bonus mode with the best EXP/gold/Drop bonuses in the game with none of the enemy bonuses.

I honestly thought it was just a standard Hard mode, something like adding som % to enemy stats some extra bosses and called it a day.

Kind of, since you unlock a lot of new stuff, but the gameplay is not varied enough to justify going through all of that to be frank.
I did it and it was really not worth it, especially since the enemy bonuses become so ridiculously high there's only one viable strategy to use at all time and it's not really challenging or fun either.
It's fun to see all those old enemies from previous games again though, a lot of enemies in Xeno appeared only in the original Metal Max and honestly, they hit the nostalgia spot really hard, especially the Rommel Ghost and Brass Banshee.

Besides, that's not really the story, the story is you fucking shit up with your bros and stumbling into Noa, what caused the great catastrophe is just general lore, not the point of the story.
Metal Max is about you becoming a hunter and living the hunter life, then as you explore you learn more things about the world you're living in you eventually happen into Noa, fuck it up and go back to your Hunter business, as you noticed the game doesn't end after you beat Noa either, it ends when you, as a player, want it to end.
MM2 is another story though.

No, the story is about (You) becoming a hunter and getting dem bounties, Noa is just there to give you context for the world and to put a big bad that acts as the strongest boss in the game.
Again, the game doesn't end after you beat Noa, you have no personal beef with it either, nor anybody really cares, the ending doesn't even remotely mention or acknowledge Noa.

Pretty good, although a bit different from the rest of the series due to some mechanical differences like CPUs being a proprietary part that can't be swapped, you use chips instead to customize the base CPU.
Some other optional parts like air conditioners do not exist due to the actual poison mechanics being changed, same with things like burn or freeze stats, they do not exist in Xeno, same with other things like lead mushrooms.

For evertyhing else, it's pretty much on the same level as 2R/4, a bit better for some things since you can now mass produce tanks when you get the blueprints and have enough materials, so you can have a team of three red wolves if you want, which is nice.
Due to the game being linear though, do not expect the amount of fuckery you can do in other games, the upgrade routes are pretty much completely linear, which brings the general gameplay down compared to other games.

The tanks themselves are pretty great though.
